Ingredients
Dates (medjool is best, but deglet works, too)
Nut butter or whole nuts (I love roasted peanut butter, roasted almond butter, and raw almonds)
1/4 cup melted coconut oil
1/4 cup sifted cocoa powder
2 Tbsp. maple syrup
pinch salt
dash vanilla extract
Instructions
Remove the pit of the date by slicing it “hot dog-style” or long-ways. Do not slice all the way through the fruit.
Stuff the date with your nut butter and/or nuts. Be sure to not over-stuff your date. Close the date around the filling.
Mix melted coconut oil, cocoa powder, maple syrup, salt, and vanilla in a small bowl. Dip the date into the “chocolate” and place on a plate in the fridge or freezer to set. Leftover homemade chocolate can be poured into molds and placed in the freezer for future indulging.
Store your chocolate-dipped nut-stuffed date in the fridge.
