Tiramisu LÄRABAR Bites

A vegan and gluten free play on my favorite packaged snack and my ultimate dessert of choice!

Ingredients

  • 1/2 cup pitted medjool dates, divided
  • 1 cup brewed coffee at room temperature
  • 1/4 cup almonds
  • 1 tsp. cocoa powder (or to taste), + extra for rolling if desired
  • 1/2-1 Tbsp. nutritional yeast

Instructions

  1. Prepare your Coffee Dates: Soak half of the dates in the coffee for a few hours. After that time, remove the dates from coffee and blot dry. Drink or discard coffee.
  2. Make the Tiramisu Balls: Place coffee dates, un-soaked dates, and almonds in a small food processor and blend until combined and a ball starts to form. You may need to scrape down the sides of the food processor.
  3. Add cocoa and nutritional yeast, and blend until combined. Scrape mixture into a small container and place in the fridge to chill. The mixture will be sticky – if it’s too sticky, feel free to blend a few more almonds into the mix.
  4. Once chilled, remove mixture and form into balls (I used a tablespoon scoop and got 5 out of the mix). Roll in cocoa if desired. Alternatively, you can cut these into bars like the actual LÄRABARs. Devour.
