Frozen Banana Bites

These Frozen Banana Bites are the perfect gluten free and vegan treat for those late-night summer Netflix parties! Arrested Development fans will love ’em!

Ingredients

  • 1 banana
  • 2 Tbsp. cocoa powder
  • 2 Tbsp. + 1 tsp. coconut oil, divided
  • 1 Tbsp. maple syrup
  • splash pure vanilla extract
  • pinch salt
  • 1/4-1/2 cup chopped nuts (I used pecans because I love them dearly, but use your fav)
  • 1/2 Tbsp. coconut butter

Instructions

  1. Prepare the banana: Peel banana and slice into four equal-sized chunks. Insert a toothpick into the bottom of each chunk. Place chunks on a sheet of aluminum foil and freeze overnight.
  2. Prepare the Chocolate Coating: The next day, add cocoa powder and 2 Tbsp. coconut oil to a microwave-safe bowl. Microwave until the coconut oil is melted. Mix to combine. Add maple syrup, vanilla, and salt, and mix to combine. Set aside.
  3. Pour nuts onto a small plate. Set aside.
  4. Prepare the Coconut Drizzle: Add coconut butter and 1 tsp. coconut oil to a microwave-safe bowl. Microwave until the coconut oil is melted. Mix to combine. Set aside.
  5. Assemble the Frozen Banana Bites: Remove banana chunks from the freezer. Dip each chunk into the Chocolate Coating. Place back on aluminum foil and return to the freezer for the chocolate to set, 3-5 minutes.
  6. For Nut-Covered Bites: Remove banana chunks from freezer. Dip banana chunks in a second coating of chocolate. Immediately roll in nuts. Place back on aluminum foil and return to the freezer for the chocolate and topping to set.
  7. For Coconut-Drizzled Bites: Remove banana chunks from freezer. Use a spoon to drizzle coconut butter across the top. Place back on aluminum foil and return to the freezer for the drizzle to set.
  8. Store Frozen Banana Bites in the freezer. I love removing them from the freezer and placing them in the fridge 2-3 hours before I’m ready to enjoy them.
