  • 1/4 cup coconut oil, melted
  • 1/4 cup mashed banana
  • 2 Tbsp. maple syrup
  • 1 tsp. ground cinnamon
  • 1 tsp. pure vanilla extract
  • pinch salt
  • 2 cups rolled oats
  • 1 cup raisins
  • Optional: 1/2 cup walnuts

  1. Preheat your oven to 350 degrees F. Line a baking sheet with parchment paper.
  2. Add coconut oil, banana, maple syrup, cinnamon, vanilla, and salt to a large bowl, and mix until well combined. Try to remove the big chunks of banana, but it’s OK if a few small chunks remain.
  3. Add oats, and mix until each and every oat is coated with your wet mixture.
  4. Turn oat mixture out on the prepared baking sheet and form into a thin rectangle. Place in the oven and bake for 20-25 minutes, or until oats are toasty and golden brown. Halfway through the cooking time, be sure to GENTLY mix the granola – you don’t want to break up all of the big chunks that will form. During the last 5 minutes of the cooking time, add in your raisins and optional walnuts.
  5. Remove from oven and allow to cool completely before storing in an air-tight container (I’m partial to mason jars).
