Ingredients
2 cups rolled oats (gf if you want)
1/2 cup chopped almonds or walnuts
1 Tbsp. chia seeds
3 Tbsp. melted coconut oil
1/3 cup maple syrup
zest of 2 large oranges
1 Tbsp. pure vanilla extract
1/2 tsp. cinnamon
pinch salt
Instructions
Preheat your oven to 325 degrees F. Line a baking sheet with parchment paper.
Combine oats, almonds, and chia seeds in a large bowl, and quickly mix to combine. In a separate bowl, combine melted coconut oil, maple syrup, orange zest, vanilla, cinnamon, and salt. Whisk to combine.
Pour wet ingredients into your dry ingredients and mix with a rubber spatula until all of the dry ingredients are coated in the mixture.
Pour mixture onto your prepared baking sheet and flatten into one layer. Bake for 20 minutes. Turn the baking sheet, and bake for another 5-10 minutes, or until the outside becomes lightly golden.
Remove from oven and allow to come to room temperature before breaking the pieces apart. Store in an air-tight container.
