Vegan Matcha Dark Chocolate Truffles

The richest truffles ever! Made with only four ingredients, and they’re naturally gluten free and vegan. Perfect for St. Patrick’s Day or any day!

Ingredients

  • 3.5 oz. vegan dark chocolate, roughly chopped
  • 3.5 Tbsp. canned full-fat coconut milk*
  • 1 Tbsp. matcha
  • 1/2 – 1 Tbsp. powdered sugar**

Instructions

  1. Add chopped chocolate and coconut milk into a microwave-safe bowl. Microwave for 30 seconds, then mix well. The mixture will start to seize – that’s okay. Place bowl in the fridge to set until firm, about 20-30 minutes.
  2. Meanwhile, mix matcha and powdered sugar in a small bowl. Set aside.
  3. If the mixture is too firm to form into small balls with the warmth of your hands, stick the bowl back into the microwave for 5 seconds (no more).
  4. Scoop 1 tsp.+ amounts of chocolate into your hand and roll into a ball. Lightly roll each chocolate ball in your matcha mixture, and then set on a plate or a bowl to serve.

Notes

*I used the full-fat coconut milk from Trader Joe’s. It has two ingredients: coconut milk and water. The water really helps the truffle-making process.

**The sweetness depends on your taste. Add additional powdered sugar if the matcha mixture is too earthy for you.
