Ingredients
2 cups cashews, soaked in water overnight
3 chipotle peppers in adobo
1 Tbsp. adobo sauce
juice of 1-2 limes*
1+ cup water
salt + pepper
Instructions
Drain and rinse your cashews. Dump them into a high-powered blender along with your chipotle peppers, adobo sauce, and lime juice. Add 1/2 cup water, and blend, drizzling the rest of your water in the blender as it’s blending. You want to add enough to get it nice and creamy and thick. You might need to stop and scrape down the sides as well.
Season with salt + pepper, and blend to combine. Serve as a dressing, spread, or dip!
Notes
*I only used one lime, but if you like your crema tangier, add two.
