Vegan Waldorf Salad with Chickpeas

A creamy, tangy, sweet, and crunchy salad perfect for lettuce wraps, sandwiches, or all on its own! Naturally vegan and gluten free.

Ingredients

  • 1/2 cup plain hummus
  • 2 tbsp. lemon juice
  • salt + pepper
  • 1 15-oz. can chickpeas, drained
  • 3/4 cup grapes, halved
  • 3/4 cup walnuts, roughly chopped
  • 1 small gala / fuji apple, diced

Instructions

  1. Mix your hummus and lemon juice together in a small bowl. Season with salt and pepper and set aside.
  2. Mix your chickpeas, grapes, walnuts, and apple chunks in a large bowl. Pour your sauce over the top and toss to coat. Taste, and adjust seasoning as necessary.
  3. Serve on bread, in lettuce wraps, or on its own!
