[Welcome to Oat Week – Valentine’s Day Edition! This post is sponsored by my wonderful friends over at Bob’s Red Mill – we’re using their Gluten Free Oat Flour for these Healthy Peanut Butter Hearts!]
Not to get all mushy on your guys, because, seriously, been there/done that, but unlike every other year of my 23 years of living, I’m seriously looking forward to Valentines Day this year! Because unlike every other year of my 23 years of living, I actually have a boyfriend on Valentine’s Day!
Now, I’m not saying that you have to have a S.O. in your life in order to enjoy Valentine’s Day, but the first year you get to spend the most love-infested day of the year with your main-squeeze is kinda totally ridiculously exciting.

CHRISTMAS COOKIES. To tell you the truth, I never really gravitated towards cookies in years past. Cookies just don’t excite me as much as a fudgy, chewy brownie, a seeeeeriously dark piece of chocolate cake, or some fresh chocolate-dipped fruit.
Until this year.
This year, I’ve gone completely #cookiecrazy. It has been a freakin’ winter wonderland here in the apartment for monhts. Mark and I have pretty much been swimming in Christmas cookies since I wrote my eCookbook a couple of months ago. Not that I’m complaining. It’s been a delicious situation, but a situation nonetheless.
(shameless plug: you can STILL sign up to receive my eCookbook, The Skinny Santa: your essential guide to healthier holiday treats, in the month of December fo’ free! Doooo eeeet!)
So naturally, I’ve been fan-girling over all of the insanely incredible cookie recipes floating around the interwebs this year. From gingerbread, to snickerdoodles, to peppermint, to peanut butter…it’s kind of amazing just how many flavor combinations make up this yummy time of year! So I’ve rounded up 18 of my favorite gluten free vegan Christmas cookie recipes for your viewing (and drooling) pleasure here today! I hope you find some fun cookie inspiration for your happy, somewhat healthy, holiday celebrations!

Guys, I’m SO stinkin’ excited about this post!
One, because I know ye who are in search of some healthy eating tips will benefit from it. Two, because I’m greedy. I struggle with staying on track so much during the holidays. When there are so many decadent dishes and delicious desserts on the table right in front of me, how can I not indulge this time of year?! And that’s coming from someone who actively tries to eat as many whole foods as possible all year long. But I’m here today with a few tips to help guide you through the holiday season by making healthier choices whenever possible.
We’re going to start attacking this topic from the source: why should you and I care about making healthier choices? Holidays are the time were indulging is at its peak; nobody wants to say “no” to those tempting Christmas cookies. It’s important that we’re mindful of these temptations and try to strike a balance between satisfying and nourishing food choices. Because who in the world would want to choose the healthier option if it tastes like dirt and/or grass? YEEEEAHnotme.
Thus my 5 Healthy Eating Tips for the Holidays were born! These 5 simple tips were created to help you enjoy the holidays while still keeping my health goals in mind. Let’s conquer this holiday season, friends!Read More

So, have you recovered from your Thanksgiving feast yet?
I’m definitely still feeling that whole ohmygoodnessIcan’tbelieveIateallofthat thing. I had this insanely delicious broccoli quinoa slaw with a honey mustard dressing, this super simple fennel puree, these outrageously decadent scalloped potatoes, and these super festive holiday Moscow Mules. Needless to say, Thanksgiving was an über-success.Read More

When I first took the leap and started watching what I was eating, I had the mindset that low calorie = healthy.
It’s a simple mistake to make; after doing a little research, the general consensus is that a calorie is a calorie. Eating too many of them isn’t so good for the good ol’ waistline, right?Read More

So, back when I was a meat-eater, Thanksgiving foods never really excited me.
Stuffing is soggy bread. Turkey is dry and tasteless. Ham is way too salty. Mashed potatoes are delicious, but super duper filling. Cranberry sauce…no food should jiggle that much.
I’ve always felt pretty “meh” about the whole Thanksgiving feast idea.
Until I turned vegetarian.Read More
