What’s been happening this week? Did you have a fun Memorial Day?
I had a splendid little Memorial Day with my family and Mark. My parents broke out the grill. We had quinoa… two ways ’cause we’re fancy. They had burgers. We had my Vegan Red Velvet Cheesecakes and watermelon for dessert. It was a glorious day.
But the shining moment of the dinner? Corn on the cob. GUYS. Corn on the cob may very well be my favorite part of the summer. Is there anything better than munching on that sweet, juicy yellow cob? I love mine coated with smoked paprika. I’m extremely confident in the fact that it’s THE BEST way to enjoy corn. Ahh.
I’m genuinely excited about the next couple of recipes I’m going to share with you here on Fooduzzi. I’ve been diligently trying to spit out some quality summer recipes for ya, and I really think I have some winners heading your way. We’re huge drinkers in my apartment.
No, not alcohol (although, we do love our red wine and prosecco). I’m talking liquid in general. Iced tea. Seltzer water. Lemonade. Smoothies. Arnold Palmers. Regular water. We love it all.
In fact, as I’m writing this, my roommate is sitting in the living with not one, not two, but three drinks in front of them. It’s possible we have a bit of a hydration problem.
It’s funny how some words are total turn-offs for people.
Like “moist.” I don’t get it, but some people just recoil at the mention of this five-letter phenomenon. Hopefully I didn’t lose you already. I pinky-promise that I’ll never say it again.

I have a busy weekend ahead of me. Aka. I have plans to get Mexican food both days this weekend. Nothing screams “Memorial Day weekend” quite like the sound of sizzling fajitas coming your way. Am I right?
If I’m wrong, I so don’t want to be right.
I’ll obviously be doing the whole Memorial Day picnic thing on Monday. What are your plans? I’m really excited to eat all the delicious grilled food. While I love roasting my veggies, grilling is seriously where it’s at. Smoky caramelized goodness? How can anything coming off of the grill be bad? I have a kick-butt summer marinade recipe that I use for pretty much anything that touches our grill…you shall be seeing that real soon :)
I also love all the random salads and sides. We used to be big fans of that sweet and sour ramen salad…ever had it? It’s quite addictive and quite…caloric. This has been a wonderful week, don’tcha think? It was my first week of summer vacation. I worked on some kick-butt recipes. I tried this amazing tea. I ate Mexican food like, every day. It was the perfect week.
Because I have some summer vacation time before I start my “big girl” job, I will be cooking like a crazy person, trying to work on some quality content for all ya’ll. So I’m here to ask: Do you have any requests? What kinds of recipes do you want to see more/less of? Want more whole food desserts? How about quick and easy entrées? Request away!
