I was so excited for this post! I had this incredible 20-minute meal that Mark and I adore locked and loaded for you today, but once I looked at the pictures…
…well, I knew no one would make it based on what the pictures looked like.
So you’re getting cookies today!

So, I think tackling the peanut buttered Girl Scout cookies was a good idea for oat week. Do you agree? Is there anything better than a cookie + peanut butter situation?

January is a funny month where I always try to get back on track after the crazy-indulgent holidays. I’m get ridiculously pumped up, ready to workout every day after work and working to clear my kitchen of any lingering treat-yo-self goodies. I find myself saying things like,”Let’s buy cute workout clothes as inspiration!”, “Let’s buy ALL the fruits and veggies at Trader Joe’s this week!”, and “Let’s make green smoothies all day long!”
…but then, without fail, January 2 rolls around, and suddenly my body totally forgets all of it’s health-forward intentions and longs for those craveable sugary treats somethin’ fierce.

CHRISTMAS COOKIES. To tell you the truth, I never really gravitated towards cookies in years past. Cookies just don’t excite me as much as a fudgy, chewy brownie, a seeeeeriously dark piece of chocolate cake, or some fresh chocolate-dipped fruit.
Until this year.
This year, I’ve gone completely #cookiecrazy. It has been a freakin’ winter wonderland here in the apartment for monhts. Mark and I have pretty much been swimming in Christmas cookies since I wrote my eCookbook a couple of months ago. Not that I’m complaining. It’s been a delicious situation, but a situation nonetheless.
(shameless plug: you can STILL sign up to receive my eCookbook, The Skinny Santa: your essential guide to healthier holiday treats, in the month of December fo’ free! Doooo eeeet!)
So naturally, I’ve been fan-girling over all of the insanely incredible cookie recipes floating around the interwebs this year. From gingerbread, to snickerdoodles, to peppermint, to peanut butter…it’s kind of amazing just how many flavor combinations make up this yummy time of year! So I’ve rounded up 18 of my favorite gluten free vegan Christmas cookie recipes for your viewing (and drooling) pleasure here today! I hope you find some fun cookie inspiration for your happy, somewhat healthy, holiday celebrations!
